Cupcakes for Charity 2011 - March


March

This month the 3rd Thursday conveniently fell on St Patrick's Day. I made up Chocolate Guinness cupcakes with coffee butter cream frosting. I have always wanted to try out the beer cake thing so this was the perfect opportunity. I only made 2 dozen cupcakes to sell this time, as I'm a bit tired of desperately trying to convince people to buy the last few. Murphy's law, these cupcakes sold out REALLY quickly, and lots of people were upset they missed out. I seriously can't win!


Chocolate Guinness Cupcakes - Recipe from Annies Eats.
Makes 24 large cupcakes

Ingredients

1 cup stout (Guinness)
16 tbsp. unsalted butter
¾ cup unsweetened cocoa powder
2 cups all-purpose flour (I used Self Raising Flour and omitted the salt and baking soda)
2 cups sugar
1½ tsp. baking soda
¾ tsp. salt
2 large eggs
2/3 cup sour cream

To make the cupcakes, preheat the oven to 350°F/180°C. Line two cupcake pans with paper liners. Combine the stout and butter in a medium saucepan over medium heat. Add the cocoa powder and whisk until smooth. Remove from the heat and allow to cool slightly.

In a large mixing bowl, combine the flour, sugar, baking soda and salt. In the bowl of an electric mixer fitted with the paddle attachment, beat together the eggs and sour cream to blend. Add the stout-butter mixture and beat just to combine. Mix in the dry ingredients on low speed just until incorporated. Divide the batter evenly between the cupcake liners, filling them about 2/3 to ¾ full. Bake until a toothpick inserted in the centre comes out clean, about 17 minutes. Allow to cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely. Frost as desired and nom nom nom nom.


All proceeds were donated to the Red Cross Japan and Pacific disaster appeal, instead of my usual animal charity, as while sick on the couch I watched probably too many hours of the disaster footage, and I really felt like I needed to do something for the people who were so lovely to us on our holiday in Tokyo last year.

haha aww that's too bad. I want to try them! I love Guinness every now and then. It's so different. I love the photo! The cupcakes turned out really cute. I guess it's better to have them wanting more. Maybe next time you can make a lot and they will come running thinking you will sell out fast again. :)
